I was first approached by the lovely Victoria Carr via my Instagram. She kindly sent me some cakes to try and they were UHMAZING. Gin and tonic cupcakes and… NUTELLA macarons. Yes. Nutella. In a macaron. You’re sold, right? Anyone that can make cakes that taste and look SO good deserves recognition, and I wanted to find out more about Victoria and what made her tick. So she is my latest #BossBabe.
Tell me a little bit about your background.
I’m originally from Manchester, born and raised a Mancunian and a huge Man United fan, even heading to Salford University to study Psychology to be closer to home! I moved to Berkshire when I was 6 but my love for the north is still huge.
Tell me a little bit about yourself and your company.
I started Victoria’s Sponges nearly two years ago when my boss at the time asked me to make her wedding cake. I baked a lot for work at the time and she just loved it so much. We did a few trial runs and then her wedding was in August 2015. It was from then that I really thought about launching Victoria’s Sponges, and with my name being Victoria, it seemed like the perfect career choice!
What’s the best thing about your job, and why?
The best thing about Victoria’s Sponges is being able to create flavour combinations and designs, totally self-taught. I’m incredibly proud of what I’ve achieved so far and I hope that the business goes from strength to strength.
What’s the most difficult part about your job, and why?
The most difficult thing is finding the time to write blogs and create new products. At this stage, it’s about making the time investment as much as possible (meaning very little sleep).
What do you think sets you aside from your competition?
My creativity and the gorgeous alcoholic cakes, especially my gin and tonic cupcakes! Victoria’s Sponges best-seller (and my favourite too).
Who or what inspires you?
Other cake/bakery businesses that have gone from strength to strength. Especially @finchbakery. Seeing them achieve what they have makes me feel inspired to do the same.
If you could impart some wisdom to your fifteen year old self, what would you say?
Ignore the Nay-Sayers. Stay positive, work bloody hard and the success will follow
If someone wanted to follow in your career path, what advice would you give to them?
You have to be committed. If you want to succeed, it comes at a cost. But it will be worth it in the end. And don’t quit! Keep going, no matter how many people say you can’t.
Describe to me your perfect work day!
Wake up and write a new blog before 9am, work out orders that need to be complete, create some new flavours and test them out, a few social posts showing the progress, record a video for social/website/blog, bake a beautiful occasion cake!
When you’re not busy working, how do you relax?
Baking is what relaxes me, and writing! I also love a good bubble bath and a gripping book
What’s your favourite drink/cocktail?
Pina Colada! In a cupcake too!
What music do you listen to when you really need to get stuff done!?
Ed Sheeran – he motivates me and it’s easy listening
Who would you like to work with, if anyone, and why?
Buddy – cake boss! He’s amazing at our craft and I would love to work with him
What’s coming up for Victoria’s Sponges?
The website will be launching in the next month and taking it to the next level. We’re getting busy with wedding cake orders, but still a few weekends left throughout July and August!
